No-Bake Chocolate Coconut Slice
This slice takes no time to make, and it satisfies your sweet cravings in a food-as-medicine way!
It is nutrient-rich thanks to magnesium from raw cacao powder (different to processed cocoa powder), healthy fats in coconut oil, iron in the dried figs... the cinnamon even works to balance your blood sugar levels :)
Ingredients
1/4 cup coconut oil, melted
1/4 cup rice malt syrup
1/2 cup raw cacao powder - different to cocoa powder
1/2 cup tahini (unhulled is nuttier in taste)
4 dried figs, roughly chopped
A handful of almonds, roughly chopped
A sprinkle of cinnamon
A sprinkle of salt
Coconut flakes, for the topping
Method
1. Melt the coconut oil in a small saucepan on a very low heat - keep your eye on it, it won't take long! Mix in the rice malt syrup to combine.
2. Pour the above into a mixing bowl with all other ingredients (except the coconut flakes) - stir with a wooden spoon until combined.
3. Pour the mixture into a small tray lined with baking paper and top with coconut flakes. Allow to set in the fridge for at least 30 minutes. Cut into small pieces (it is rich!), store in the fridge, and enjoy!
